Nestled in the serene foothills of the Rocky Mountains, Evergreen, Colorado, is a charming town known for its stunning natural beauty. It’s the perfect spot to spend the weekend, or a fantastic town to take a pit-stop in if you are driving into the Rockies, perhaps to Aspen, Maroon Bells, Hanging Lake, or further.

I’ve been spending a lot of time in Colorado lately and have found myself at a bunch of different coffee shops throughout the state. One in particular in Evergreen was so good that I just had to write an article about it: Bivouac Coffee Co.! If you’re driving through the Rockies, then I highly recommend you take a stop at Bivouac Coffee Co., what I consider to be the best coffee in Evergreen, Colorado, and maybe even in the Rockies in general. Bivouac is both a coffee shop and a roastery, only about a 30-minute drive from downtown Denver.

When I visited Bivouac Coffee Co., I was greeted by the aroma of freshly roasted coffee beans and a friendly barista. The ambiance is cozy and rustic inside, and there is some outdoor patio seating as well with nice views. The area is not very busy so it was a peaceful spot to relax. I spent the afternoon here getting some work done outside before having to catch a flight out of Denver.

What I liked about Bivouac Coffee Co. (aside from their delicious coffee) is the fact that they roast their own beans, plus they are hugely committed to sustainability. Check out this excerpt from their website:

Basically, they are the first United States roaster to sun dry their coffee within its cherry, instead of washing it off. As an Environmental engineer with a lot of background in water resources, I think this is so cool!

Why I Love It

Bivouac Coffee Co. has a solid menu of coffee drinks that cater to all tastes. My two favorites were the cold brew and pour-over. Awesome espresso drinks too. The cold brew was some of the best I’ve ever had! Seriously!

  • Atmosphere: It is a perfect spot to sit indoors or outdoors to relax, sip some coffee, chat, or get some work done. The shop is also located next to 14 miles of trails.
  • Events: Bivouac Coffee regularly hosts coffee classes/tasting sessions.
  • Sustainability and Ethical Practices: Their dedication to sustainability not only benefits the farmers but also ensures that the coffee is as good for the planet as it is for your taste buds!
  • Beans: You can buy fresh-roasted beans at the store to take home (whole bean or ground). I bought an Ethiopian Gugi bag to take home that was roasted three days prior. Enjoying it as I write this!
  • Shipping: If you don’t live nearby, you can order coffee beans online and ship them to your home.
  • Price: The cost was compatible with other coffee shops, about the same price as Starbucks for reference.
